Press that Mobage icon in the top right corner when in-game and there you can find a logout button. Then you can create a new account.

As many email address' as you have is how many ninjas you can play. I dont thing you can have multiple ninja on one email address. Also when creating a new ninja remember your ninjas name can only have 13 characters in it or will be cut off as far as i know
